Green belt : Dive into the world of enriched doughs—think brioche.
Brown belt : Or sourdough belt, the holy grail of bread. This is where the magic happens.
Black belt : Master advanced techniques, like decorative scoring and multi-day fermentation.

It is a 5-class program to make you master baking a great variety of different breads.
Can't follow 5 Saturday classes in a row? It's alright, we can give you 2 make up classes and schedule them when you see fit.
Just want to try 1 class? No problem, not everyone is courageous from the beginning.
Come for a trial white belt class and we will give you the opportunity to come back and earn your
black belt.

Adult class: Over multiple weekends, our dough loving chefs will guide you
through the foundational techniques of creating classic breads from scratch,
and above all, you will get to connect with other bread enthusiasts eager to learn

What are we going to learn?

Week 1
Focaccia
Baking personal sized focaccia with traditional toppings, and receiving dough to bake at home with some more recipe ideas. Fundamentals of proofing, yeast, and flour choice.

Week 2
Buns & Rolls
We will be baking pretzel style dinner roll. Working with yeasted doughs and shaping rounds will be the focus.

Week 3
Enriched Doughs
We will make a chocolate challah braid. Going over braiding technique and making enriched bread doughs.

French baguette
Learn to make authentic French baguettes from scratch, including mixing, shaping, and baking. Take home your own fresh loaf and the skills to make more.

Week 5
Bagel
Master the art of traditional bagel-making, Montreal style — boiled, baked, and topped your way. Learn shaping techniques and take home fresh, chewy bagels.

Extra Sunday class
Sourdough Introduction
Receive sourdough mothers and learn how to care for them as well as baking and shaping first sourdough country style loafs

With the skills you’ll gain in our Noodle-Jo, you’ll have the confidence to mix, knead, roll, and shape your wayout of any sticky pasta situation. The art of the supple noodle strike.
Our classes are designed to equip you with the culinary expertise, to craft perfect pasta from scratch, no store-bought shortcuts needed. Our disciples will also be confronted to secret sauces and gain access to a friendly social club.

Further more, we occassionnally released weekdays evening classes from, 7pm to 9pm. The spontanious classes will be announce in our Whatsapp group.

No problem, we will have make up classes for you. Week 1 to 5 of the program always come back
on the calendar. When registered, you will have a period of 2 months to complete your classes.
What are we going to learn?

Class 1
Orecchiette Puttanesca
Start with handmade orecchiette, a classic pasta from Southern Italy. You'll prepare a traditional puttanesca sauce from scratch, balancing bold flavors of olives, capers, anchovies, and tomatoes. Learn how this dish evolved and why orecchiette's shape perfectly captures the sauce.

Class 2
Gnocchi with Brown Butter & Sage
Master the art of pillowy potato gnocchi and pair it with a rich, nutty brown butter and sage sauce. Explore the origins of gnocchi across Italy and beyond, understanding why different regions prefer varied techniques and ingredients.

Class 3
Ravioli alla Vodka
Create delicate handmade ravioli filled with a creamy goat cheese and dill mixture, served with a luscious vodka-infused tomato and leek sauce. Discover how vodka enhances the sauce’s texture and depth, and compare variations of ravioli fillings from different culinary traditions.

Class 4
Traditional Italian Carbonara (No Cream, Just Authenticity!)
Experience carbonara the way it's meant to be—using only eggs, Pecorino Romano, guanciale, and black pepper. Learn why the creamy texture comes from technique, not cream, and discuss how this dish has been altered worldwide (for better or worse!)

Farfalle & Fusilli with Pesto Genovese
