master baking a great variety of different breads.
Can't follow the 5 classes? It's alright, not everyone is courageous from the beginning.
Come for a trial white belt class and we will give you the opportunity to come back and earn your
black belt.
THE PROGRAM
Adult class: Over multiple weekends, our dough loving chefs will guide you
through the foundational techniques of creating classic breads from scratch,
and above all, you will get to connect with other bread enthusiasts eager to learn

WHAT ARE WE GOING TO LEARN?

Week 1 Focaccia
Baking personal sized focaccia with traditional toppings, and receiving
dough to bake at home with some more recipe ideas. Fundamentals of proofing, yeast, and flour
choice.

Week 2 Buns and Rolls
We will be baking 2 different breads: pan au lait burger bun and a pretzel
style dinner roll. Working with yeasted doughs and shaping rounds will
be the focus.

Week 3 Enriched Doughs
We will make a brioche loaf as well as a chocolate challah braid.
Going over braiding technique as well as how to add butter for making enriched bread doughs.

Week 4 Sourdough introduction
Receive sourdough mothers and learn how to care for them as well as baking and shaping first sourdough country style loafs

Week 5 Sourdough
Baking with the mothers acquired in the previous class with a more in
depth look at shaping and slashing techniques

This isn’t just a pasta-making class—it’s a 5-class journey of dough mastery that takes you from a humble White Belt novice to the elite ranks of a black belt confidence, ready to roll, cut, and shape your way to Italian excellence. Additionally, this is a social evening event where martial foodies meet, and can also enjoy a glass of elexir and serenity. Dry nights? No, absolutely not! Like our pasta, we don't do dry. We pair every fresh pasta dish with an equaly beautiful sauce and a wine to appreciate, and to feast.

How fun is this class?
Really fun! The pasta Masterclass is designed to be interactive and a great social event surrounded by professional chefs and curious students. More over, every pasta class of the programs gets paired with a different glass of wine, which is included in your program.
What is the schedule?
Send us an email to know the dates. This 5 week program is scheduled every month during
various weekdays and weekends. 5pm to 7pm.
You're missing a class or have a busy schedule?
No problem, we will have make up classes for you and Week 1 to 5 of the program always come back
on the calendar. When registered, you will have a period of 2 months to complete your 5 classes.
WHAT ARE WE GOING TO LEARN?

Week 1 Orecchiette Puttanesca
Start with handmade orecchiette, a classic pasta from Southern Italy. You'll prepare a traditional puttanesca sauce from scratch, balancing bold flavors of olives, capers, anchovies, and tomatoes. Learn how this dish evolved and why orecchiette's shape perfectly captures the sauce.

Week 2 Gnocchi with Brown Butter & Sage
Master the art of pillowy potato gnocchi and pair it with a rich, nutty brown butter and sage sauce. Explore the origins of gnocchi across Italy and beyond, understanding why different regions prefer varied techniques and ingredients.

Week 3 Ravioli alla Vodka
Create delicate handmade ravioli filled with a creamy goat cheese and dill mixture, served with a luscious vodka-infused tomato and leek sauce. Discover how vodka enhances the sauce’s texture and depth, and compare variations of ravioli fillings from different culinary traditions.

Week 4 Traditional Italian Carbonara (No Cream, Just Authenticity!)
Experience carbonara the way it's meant to be—using only eggs, Pecorino Romano, guanciale, and black pepper. Learn why the creamy texture comes from technique, not cream, and discuss how this dish has been altered worldwide (for better or worse!).

Week 5 Farfalle & Fusilli with Pesto Genovese
Finish strong by crafting two versatile pasta shapes—farfalle and fusilli—perfectly suited for a vibrant, herbaceous pesto Genovese. Explore how different cultures have adapted pesto and why its traditional ingredients (basil, pine nuts, Parmesan, and olive oil) create the perfect balance.
